What is Yaki Udon?

Yaki Udon is a Japanese stir fry noodle that is made with:

  •  Noodles: Specifically, Udon noodles.
  • A source of protein: You can use shrimp, pork, chicken, beef, or tofu.
  •  Vegetables: You can add vegetables of your choice.
  •  Savory sauce

Ingredients for this recipe

Udon noodles: You can use packaged, frozen, or fresh udon noodles.

Vegetable oil: Use sesame oil, sunflower oil, or olive oil.

Mushrooms: Choose your favorite type. We’ve used chestnut mushrooms.

Bok choy: Chopped. You can replace it with another type of cabbage.

Onion: Cut into half-moons.

Spring onion: Adds extra flavor.

Garlic: A must on every stir fry.

Ginger: An ingredient on many Asian-inspired dishes.

Sesame seeds: To garnish.

Sauce: A combination of mirin, oyster sauce, dark soy sauce, and brown sugar.

How to make this recipe

Cook the noodles according to package instructions. Drain and rinse with cold water. Set aside.

Mix the sauce ingredients in a small bowl and set aside. Next, prepare all the vegetables and set them aside. Heat a large pan over medium-high heat with a drizzle of oil.

When hot, add the garlic, ginger, onion, and spring onions and saute for 1 minute or until soft. 

Then, add the mushrooms and bok choy and saute for 4 minutes or until soft. Frequently stir to prevent burning. Next, add noodles followed by the sauce mixture and stir continuously to combine everything.

Finally, add the sesame seeds and more spring onions on top to garnish. Serve immediately.

Stir Fry Ingredients

  • 500 g Udon noodles
  • 1 tbsp vegetable oil
  • 3 garlic cloves minced
  • 1 small piece of ginger minced
  • 1 onion cut into half-moons
  • 2 spring onions chopped
  • 2.5 oz bok choy chopped (70 g)
  • 6.5 oz mushrooms chopped (180 g)
  • 1 tbsp sesame seeds optional
