Cook the noodles according to package instructions. Drain and rinse with cold water. Set aside.
Mix the sauce ingredients in a small bowl and set aside.
Next, prepare all the vegetables and set them aside.
Heat a large pan over medium-high heat with a drizzle of oil.
When hot, add the garlic, ginger, onion, and spring onions and saute for 1 minute or until soft.
Then, add the mushrooms and bok choy and saute for 4 minutes or until soft. Frequently stir to prevent burning.
Next, add noodles followed by the sauce mixture and stir continuously to combine everything.
Finally, add the sesame seeds and more spring onions on top to garnish. Serve immediately.
