These are the main ingredients that you will need for this plant-based fried rice:

  • Rice
  • Tofu
  • Cabbage
  • Green onions

  • Teriyaki sauce 
  • Chili sauce
  • Sesame oil

How to make this recipe

First, rinse the rice and cook according to package instructions.

 Next, drain the tofu, press out as much liquid as possible with the help of paper towels, and cut it into cubes. Add the tofu to a bowl and season with garlic powder, salt, and pepper.

Prepare the vegetables and set them aside. Heat a wok or a large skillet on medium-high heat with a little bit of olive oil.

When hot, add the tofu and saute for 4 minutes until lightly browned. Stir often to prevent burning, and when cooked, remove from the pan and set aside.

Add more oil to the pan and saute the garlic and onion for 2 minutes. Next, add the cabbage, green onions, and saute for more 2 minutes. When the cabbage is tender, add the tofu and combine everything. 

Finally, add the cooked rice, teriyaki sauce, chili sauce, and sesame oil and stir. Serve in a bowl garnished with sesame seeds and more chopped green onions.

  • Rinse the rice before cooking: Washing the rice before cooking will rinse off the excess starch and prevent the rice from sticking together while you’re stir-frying it.
  • Use extra-firm tofu: Extra-firm tofu is perfect to stir-fry because it holds its shape and texture while cooking.
  • Press the tofu to squish out as much water as possible: The less liquid in the tofu, the more crispy it will get! Make sure you press the liquid out of the tofu as much as possible before cooking.

Ingredients  

Tofu Ingredients

  • 7 oz extra-firm tofu drained and cut into cubes (200 g)
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1 pinch salt
  • 1 pinch pepper

Fried Rice Ingredients

  • 3 cups cooked basmati rice 500 g
  • 1 tbsp olive oil
  • 2 garlic cloves minced
  • 1 onion chopped
  • 1 cup chopped bok choy
  • 1/4 cup chopped green onions
  • 1/2 tbsp sesame oil
  • 2 tbsp teriyaki sauce
  • 1 tsp sweet chili sauce
  • sesame seeds to garnish optional

Instructions 

  1. Cook the rice according to package instructions. Once cooked, transfer to a plate or a bowl and let it cool for 5 minutes. You can use leftover rice.
  2. Drain the tofu, place it on a layer of paper towels, and press out as much liquid as possible. Then, add the tofu to a bowl and season with garlic powder, salt, and pepper.
  3. Prepare the vegetables and set them aside.
  4. Heat a wok or a large skillet with olive oil over medium-high heat.
  5. Once hot, add the tofu and stir fry for 4 minutes or until crispy and lightly browned. Stir occasionally to prevent burning, and once cooked, set aside.
  6. Stir a little more oil into the wok and saute the garlic and onion for 2 minutes.
  7. Add the cabbage and green onions, and saute for 2 minutes. Stir frequently.
  8. Add the tofu, combine it with the vegetables.
  9. Stir in the teriyaki sauce, chili sauce, sesame oil, and rice to incorporate.
  10. Serve with sesame seeds and more chopped green onions on top.
