    This gnocchi bake is easy to make, super comforting, and uses simple ingredients! It's a satisfying recipe for colder days, and all the family will love it, kids included!

    Ingredients for this recipe

    Gnocchi: Use homemade or store-bought fresh gnocchi.

    Garlic: To add more flavor.

    Onion: To add more flavor.

    Olive oil: Use extra virgin olive oil.

    Canned tomatoes: Use one can of chopped tomatoes.

    Spinach: We've used baby spinach leaves.

    Mozzarella: Use buffalo mozzarella.

    Seasoning: To season this dish, we've used salt, black pepper, dried oregano, dried basil, and coconut sugar.

    Basil: Use fresh basil leaves to garnish this dish.

    How to make this recipe

    Preheat the oven to 400 degrees F (200 C) and cook the gnocchi, according to package instructions.

    Heat a skillet or an oven-proof pan over medium heat, drizzle a bit of olive oil and when hot, saute the garlic and onion for 2 minutes or until golden.

    Next, add the chopped tomatoes, salt, pepper, dried oregano, dried basil, and coconut sugar and stir everything. Reduce the heat and let it simmer for about 5 minutes. Add the spinach leaves and cook for 5 more minutes.

    Then, add the gnocchi and stir to combine everything. Turn off the heat, add the mozzarella, and bake for 15 to 20 minutes or until golden. Serve garnished with fresh basil.

    Variations and substitutions 

    • You can substitute the spinach with another vegetable you prefer. Eggplant, zucchini, or mushrooms will work too.
    • For a vegan version, make sure you use vegan gnocchi and substitute the mozzarella cheese with vegan mozzarella.
    • Use coriander instead of basil to garnish this dish for extra freshness. 
    • You can substitute coconut sugar for regular sugar.

    Ingredients

    • 1lb 2 oz refrigerated gnocchi or vegan gnocchi (500 g)
    • 1 tbsp olive oil
    • 1 onion, chopped

    • 2 oz spinach (50 g)
    • ½ tsp salt
    • 1 pinch black pepper
    • 1 tsp dried oregano
    • 1 tsp dried basil
    • 1 tsp coconut sugar
    • 5 oz buffalo mozzarella or vegan mozzarella (125 g)
    • fresh basil, to garnish (optional)

    Instructions
