How to make this recipe
Preheat the oven to 400 degrees F (200 C) and cook the gnocchi, according to package instructions.
Heat a skillet or an oven-proof pan over medium heat, drizzle a bit of olive oil and when hot, saute the garlic and onion for 2 minutes or until golden.
Next, add the chopped tomatoes, salt, pepper, dried oregano, dried basil, and coconut sugar and stir everything. Reduce the heat and let it simmer for about 5 minutes. Add the spinach leaves and cook for 5 more minutes.
Then, add the gnocchi and stir to combine everything. Turn off the heat, add the mozzarella, and bake for 15 to 20 minutes or until golden. Serve garnished with fresh basil.
