Gnocchi Bake

This vegetarian gnocchi bake recipe is comforting, easy to make, and requires only simple ingredients! The whole family will love it, kids included! Plus, there is a vegan option too!

- 1 lb 2 oz refrigerated gnocchi or vegan gnocchi 500 g
- 1 tbsp olive oil
- 1 onion chopped
- 3 garlic cloves minced
- 1 can chopped tomatoes
- 2 oz spinach 50 g
- 1/2 tsp salt
- 1 pinch black pepper
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp coconut sugar
- 5 oz buffalo mozzarella or vegan mozzarella 125 g
- fresh basil to garnish (optional)
Preheat the oven to 400 degrees F (200 C) and cook the gnocchi, according to package instructions.
Heat a skillet or an oven-proof pan over medium heat, drizzle a bit of olive oil and when hot, saute the garlic and onion for 2 minutes or until golden.
Next, add the chopped tomatoes, salt, pepper, dried oregano, dried basil, and coconut sugar and stir everything. Reduce the heat and let it simmer for about 5 minutes.
Add the spinach leaves and cook for 5 more minutes.
Then, add the gnocchi and stir to combine everything. Turn off the heat.
Add the mozzarella, and bake for 15 to 20 minutes or until golden. Serve garnished with fresh basil.
For a vegan version, make sure you use vegan gnocchi and substitute the mozzarella cheese with vegan mozzarella.
You can substitute coconut sugar for regular sugar.
