    French Toast Casserole

    This french toast casserole is super easy to make and baked with some berries and chocolate chips on top! You can prepare this recipe the night before or bake it right away.

    Ingredients to make this recipe

    Baguette:  We've used soft sliced baguette bread. You can use brioche bread instead.

    Eggs: Use six large eggs to make this recipe.

    Milk: We've used almond milk. Any milk will work with this recipe.

    Coconut sugar: Use coconut sugar for a healthier version.

    Vanilla extract: To add extra flavor.

    Salt: To enhance all flavors.

    Frozen berries: We've used a mix of blueberries, blackberries, and raspberries.

    Chocolate chips: Use chocolate chips or chocolate chunks from your favorite chocolate bar.

    Flaked almonds: For some crunchiness.

    Icing sugar: Sprinkle some icing sugar on top.

    How to make this recipe

    Preheat the oven to 350 degrees F (180 C) and grease a baking dish. Thinly slice the bread and add it to the baking dish.

    Add the eggs, coconut sugar, almond milk, vanilla extract, salt, and whisk to combine into a mixing bowl. Pour the mixture over the bread and top with frozen berries, chocolate chunks, and flaked almonds.

    Bake for 30 to 40 minutes or until golden brown. Let it cool down a bit, sprinkle some icing sugar on top, and serve!

    Tips for making this recipe

    • Make ahead:  You can make this recipe the night before to save you some time. Prepare everything except the toppings, and keep it in the fridge overnight with some plastic wrap on top. The following day, remove the plastic wrap, add the toppings, and bake.
    • Add other toppings: Change the toppings to make different versions. You can add spices like cinnamon or pumpkin spice mix and chopped nuts.
    • Slice or cut into cubes: You can slice the bread or cut it into cubes according to its size. If you cut the bread into slices and are still very large, it is best to cut them into cubes.

    What type of bread is best for French toast casserole?

    The best type of bread for french toast is usually brioche bread because it is light and soft. But we've found that any soft bread works well with this particular recipe. 

    We've used soft baguettes for our french toast casserole, and it worked out perfectly.

    What to put on a French toast casserole?

    French toast casserole is usually a mix between sliced bread, eggs, sugar, and milk. 

    From there, you can add other ingredients to make your own version. Here are some examples:

    • Frozen berries: Just like we did in this recipe. Frozen berries are great on top of french toast casserole.
    • Chocolate chips: For the sweet tooth. If you don't have chocolate chips, you can add chocolate chunks from your favorite chocolate bar.
    • Spices: You can also add spices like cinnamon or pumpkin spice mix to make it taste like fall!
    • Chopped nuts: Use almonds, walnuts, pecans, or hazelnuts.

    Ingredients

    • 10.50 oz baguette bread, sliced (300 g)
    • 6 large eggs, at room temperature
    • ½ cup coconut sugar (80 g)
    • 2 cups almond milk (480 ml)
    • 1 tsp vanilla extract
    • 1 pinch salt
    • 1 cup frozen berries (100 g)
    • ½ cup chocolate chips or chocolate chunks (70 g)
    • ¼ cup flaked almonds (30 g)
    • Icing sugar, to garnish (optional)

    Instructions
