Thermomix Blueberry Muffins

These Thermomix blueberry muffins are moist, tender, and bursting with juicy blueberries. They're easy and delicious. Perfect for breakfast or a sweet treat. Enjoy!

Ingredients  

  • 300 g all-purpose flour
  • 2 tsp baking powder
  • 120 g unsalted butter at room temperature
  • 140 g white sugar
  • 2 eggs at room temperature
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 320 g milk ,at room temperature
  • 250 g frozen blueberries
  • 2 tbsp demerara sugar to sprinkle on top (optional)

Instructions 

  1. Preheat the oven to 350 degrees F (180 C), line a muffin tin with muffin liners, and set it aside.
  2. Add the butter and sugar to the Thermomix mixing bowl, and mix 1 minute/speed 3.
  3. Then, add the egg and beat again 1 minute/speed 3.
  4. Add the salt, vanilla extract, and milk, and mix 1 minute/speed 3,5.
  5. Add the flour, and baking powder, and mix 1 minute/speed 2.
  6. Next, add the blueberries to the batter and gently mix with the help of a spatula.
  7. Pour the batter into the muffin tins, filling them for about 3/4 of the way full, add more blueberries on top, and sprinkle with demerara sugar. Bake for about 20 minutes or until a toothpick comes out clean.

  • Sprinkle Demerara sugar on top for a delightful caramelized crunch.
