Smoked Salmon Quiche

This smoked salmon quiche is healthy, easy to make, and a great brunch, lunch, or dinner idea! It's also a great option to serve in smaller portions as an appetizer at a party!

Ingredients  

  • 4 oz smoked salmon 100 g
  • 8 oz shortcrust pastry 230 g
  • 1 leek
  • 4 eggs at room temperature
  • 7 oz shredded mozzarella cheese 200 g
  • 1 and 2/3 cups heavy cream 400 ml
  • 1/2 tsp salt
  • 1 pinch black pepper

Instructions 

  1. Preheat the oven to 390 degrees F ( 200 C ).
  2. Boil the sliced leek for 5 minutes in water with a pinch of salt, then remove the leek from the water and set aside.
  3. Add the eggs, heavy cream, salt, and black pepper to a mixing bowl and beat to combine everything.
  4. Place the quiche crust on a round baking dish.
  5. Next, spread the smoked salmon, leek, and mozzarella cheese on top of the quiche crust.
  6. Then, pour the liquid mixture over the filling.
  7. Bake for about 35 to 40 minutes or until golden. Let it sit 10 minutes before serving. You can serve warm or cold with a salad on the side.

Notes

Storage: Refrigerate your quiche in an airtight container for up to 3 days.
Remove water from leek:  Ensure you remove the water before adding the leek to the crust. Otherwise, your quiche may become watery.
Add different vegetables or ingredients: Feel free to replace any ingredient you're not a fan of. Leftover salmon, broccolini, asparagus, cherry tomatoes, and spinach work too!
