Cook the noodles according to package instructions. Drain and rinse with cold water. Set aside.
Mix the oyster sauce and soy sauce in a small bowl and set aside.

When hot, add the shrimp, season with salt and pepper, and stir-fry for 5 minutes or until cooked. Remove the cooked shrimp to a plate and set aside.
Then, add the garlic, spring onions, and ginger and saute for 1 minute.
Next, add the onion and saute until soft.
Then, add the broccoli florets, carrot and cook for 5 minutes or until tender. Frequently stir to prevent burning.
Next, add noodles followed by the sauce mixture and stir continuously to combine everything.
Finally, add the shrimp, sesame seeds, and more spring onions to garnish. Serve immediately.
