    Ingredients for this recipe

    Tortellini: Use your favorite tortellini.

    Kale: For a portion of veggies. You can use spinach instead.

    Garlic: Adds extra flavor.

    Olive oil: To saute the garlic and onion.

    Canned tomatoes: Use one can of chopped tomatoes.

    Vegetable stock: Use homemade or store-bought.

    Soy sauce: Adds extra flavor.

    Seasoning: Season with salt and pepper.

    Basil: To garnish.

    How to make this recipe

    Heat a large pot over medium heat and drizzle a bit of olive oil.

    When hot, add the onion and saute for 2 minutes or until soft.

    Then, add the shredded kale and saute for 2 minutes. Stir often to prevent burning.

    Next, add the canned tomatoes and stir to combine. Low the heat to a simmer, add the vegetable stock, salt, black pepper, soy sauce, mix everything and cook for 20 minutes.

    Finally, add the fresh tortellini and cook for 2 minutes or according to package instructions.

    Garnish with basil leaves and serve with some toasted bread on the side.

    Ingredients

    Scale
    • 9 oz fresh tortellini (250 g)
    • 1 tbsp olive oil
    • 2 cups shredded kale (30 g)
    • 1 garlic clove, minced
    • 4 cups vegetable stock (960 ml)
    • 1 can chopped tomatoes
    • 1 tbsp soy sauce
    • 2 tsp salt
    • black pepper to taste
    • basil to garnish (optional)

    Instructions
