Easy, healthy, and delicious 15-minute tofu fried rice recipe packed with vegetables!

Tofu Ingredients
- 7 oz extra-firm tofu, drained and cut into cubes (200 g)
- 1 tbsp olive oil
- 1/2tsp garlic powder
- 1 pinch salt
- 1 pinch pepper
Fried Rice Ingredients
- 3 cups cooked basmati rice (500 g)
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 cup chopped bok choy
- 1/4 cup chopped green onions
- 1/2 tbsp sesame oil
- 2 tbsp teriyaki sauce
- 1 tsp sweet chili sauce
- sesame seeds to garnish (optional)
Instructions
- Cook the rice according to package instructions. Once cooked, transfer to a plate or a bowl and let it cool for 5 minutes. You can use leftover rice.
- Drain the tofu, place it on a layer of paper towels, and press out as much liquid as possible. Then, add the tofu to a bowl and season with garlic powder, salt, and pepper.
- Prepare the vegetables and set them aside.
- Heat a wok or a large skillet with olive oil over medium-high heat.
- Once hot, add the tofu and stir fry for 4 minutes or until crispy and lightly browned. Stir occasionally to prevent burning, and once cooked, set aside.
- Stir a little more oil into the wok and saute the garlic and onion for 2 minutes.
- Add the cabbage and green onions, and saute for 2 minutes. Stir frequently.
- Add the tofu, combine it with the vegetables.
- Stir in the teriyaki sauce, chili sauce, sesame oil, and rice to incorporate.
- Serve with sesame seeds and more chopped green onions on top.
Notes
Rinse the rice before cooking: Washing the rice before cooking will rinse off the excess starch and prevent the rice from sticking together while you're stir-frying it.
Use extra-firm tofu: Extra-firm tofu is perfect to stir-fry because it holds its shape and texture while cooking.
Press the tofu to squish out as much water as possible: The less liquid in the tofu, the more crispy it will get! Make sure you press the liquid out of the tofu as much as possible before cooking.
