Description
These Thermomix pancakes are fluffy, vegan, easy to make, and perfect for a family breakfast. They're made with simple ingredients like all-purpose flour, baking powder, and milk. Plus, they're freezer-friendly and versatile.
Ingredients
- 2 tbsp sugar or maple syrup (20 g)
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 325 g almond milk, or 1 + 1/2 cups (11.46 oz)
- 1 pinch of salt
- 225 g all-purpose flour (7.93 oz)
- 1 tbsp baking powder
- 1 tsp baking soda
Instructions
- Add the sugar, cider vinegar, vanilla extract, milk, and salt, to the Thermomix mixing bowl and mix for 10 sec/speed 6.
- Then add the flour, baking powder, and baking soda. Mix for 30 sec/speed 2.
- Heat a skillet or a frying pan over low heat and grease the pan with coconut oil.
- Once hot, pour a ladle of the batter into the pan and let it cook for about 30 seconds or when bubbles appear.
- Flip it very gently when bubbles appear all over the top and let it cook for more 30 seconds to 1 minute, then plate. Repeat this process until you have used all the batter.
- Serve immediately, and add your favorite toppings!
Notes
If you don't have a Thermomix, you can still make these pancakes using a mixing bowl and whisk or a blender. Mix the dry ingredients in a mixing bowl and the wet ingredients in a separate bowl or blender. Then, gradually add the wet ingredients to the dry ingredients and whisk very gently until smooth. Be careful not to overmix the batter, as this can result in tough pancakes.
The cooking time for these pancakes may vary depending on your stove and skillet. It's important to keep an eye on the heat and adjust it as needed to prevent burning or undercooking.
